  • Tom Kha Gai

SOUP SEASON S1E5 - Tom Kha Gai

Sometimes soup offers more than warmth and nutrition. It can bring back wild memories. And this soup does that for me.

The first authentic bowl of Tom Kha I had was the morning after I landed in Bangkok with my two best friends. I was told that this soup would cure my hangover and get me ready to celebrate New Years that night. Hope was high even though my head was hanging low. My friend made the order because if I spoke, more than words would come out of my mouth. When it arrived, the soup was scorching but somehow not hotter than outside. I grabbed my spoon to dive into what seemed like medicine, took a huge bite and immediately gagged because a piece of lemongrass pierced the back of my throat. You can assume what happened after.

I’m so stoked with the finished product because it made me remember that hilarious moment with my hilarious friends right when I slurped it. That right there is a perfect bowl of soup.

Oh and go to Thailand. It’s so sick!

  • Ginger Chicken Soup

SOUP SEASON S1E4 - Ginger Chicken Soup

Sometimes you just need a few ingredients to create a flavor packed soup and this recipe is exactly that. You’ll need a ginger root as big as your hand, ground chicken, rice noodles, broth, green onions, soy sauce, fish sauce and eggs (optional but you have to add it). If you need a little spice in your life like me, throw in some chili oil. After my first bowl, I realized this is the soup you should be having when you’re under the weather. The ginger really brings some life into you and gets you right.

  • Chicken Noodle Soup

Get those bowls and spoons out because Soup Season is here! Some might say the most magical time of the year!

We are kicking it off strong (and somewhat safe) with chicken noodle soup! Some few spins we found to make this classic go to the next level is this….

Fennel seeds will add another layer of flavor that is missing in bland cns. Make sure you don’t over do it because it will overtake the soup.

Cook your chicken in the same pot! You want all that precious juice in your soup! Thank me later!

Use protein pasta! Soup season means bulking season and getting extra protein in your diet just got easier. They taste the same especially when they soak up some of the broth!

  • Butternut Squash & Sweet Potato Soup

Hot take but this might be the coziest soup. Even the process of making it gives off the same vibe. It’s little work, you can roast by a fire, and just veg out. All you have to do is chop up some squash, sweet potatoes, tomatoes, onions, carrots and garlic. Season everything with turmeric, thyme, sage, salt and pepper. Roast them for a long time. Drizzle some heavy cream and honey. Blend everything together, strain it, and enjoy! Honestly you might be done making it before you finish reading this!

Tip to making a better version than this one - have deeper scores in your squash so it cooks better. This will save you some time.

If you a texture person like myself, loaded up your bowl with pumpkin seeds!

  • Italian Wedding Soup

Time to get your hands a little dirty for this soup. Italian Wedding Soup is top tier soup for many reasons. The balance of flavors and simplicity hits the spot after every bowl. All you need is a great mirepoix, some well seasoned beef and sausage meatballs, stock, risotto, and fresh spinach. And yeah, rainbow carrots will make this soup better. Facts.

Cooking tip: make the meatballs small. Bigger isn’t always better.

Also to the loyal soup fans who have been served by me in the past, it is with heavy heart to announce that the yellow soup cauldron has gone into retirement. We had a beautiful time together and he beyond happy to make amazing meals for you all!
